    Have been very poor about eating in this month, wallet and waist both really feeling it! Made a big vat of extremely yummy chili con carne on the weekend so heavy on that this week.

    This week was / is:

    Sunday - Chili Con Carne on Spaghetti, very MSE as used leftover burgers which were languishing in the fridge from a BBQ several weeks ago
    Monday -Rice Pilaf
    Tuesday - Leftover chili on spaghetti
    Wednesday - Shakshuka with rolls from freezer (friend coming for dinner)

    Does anyone have a recipe for quiche crust that uses margarine? Butter is outrageously expensive where I live, but the marg that we has turns all sort of strange when chilled, would love guidance!

  • For us this week we have:

    Monday - Chicken curry, rice and nann - sauce from a jar.
    Tuesday - Chicken, veg and phyllie pie
    Wednesday - LO lasagne made weeks ago from the freezer, garlic bread and salad.
    Thursday - Fish Fingers, chips and beans
    Friday -
    Saturday -
    Sunday - Roast lamb with, salad and lighter bits as inlaws coming for dinner (said i'd cook rather than exspensive dinner out for their birthdays both the following week.

    Ive left Friday and Saturday blank as we are both off work this weekend so a little wishful thinking that he might treat me for a dinner out, but stuff in the freezer if he doesnt.

    Not done this on here for ages! This week:

    Mon - Sausage, chips and beans
    Tues - Chicken and mushroom risotto
    Wed - Cowboy Pie
    Thurs - Tomato and red pepper pasta with garlic bread
    Fri - Hm turkey and ham pie, mash and peas
    Sat - Mixed bean chilli wraps and potato wedges
    Sun - Away for the night so no cooking :j

    Only need to buy basics like milk/bread/fruit etc as i have most of what i need already in stock.

    Hiya

    The recipe is from the slow cooker recipe thread on here - here's a copy/paste of it :)


    Caribbean Chicken

    3 tbsp veg oil
    2 large onions, chopped
    4 sticks celery, chopped
    3 carrots, sliced
    500g mushrooms, sliced
    2 red peppers, sliced
    8 chicken joints, skinned
    400g can sliced peaches
    400g can pineapple chunks
    10 tbsp cornflour
    3 tsp paprika
    3 tbsp soy sauce
    3 tbsp worcestershire sauce
    8 tbsp malt/wine vinegar
    1 litre boiling water
    salt & pepper

    Fry onions, celery, carrot, mushroom and pepper in a pan.

    Add chicken joints and fry until browned all over.

    Drain peaches and pineapple, reserving juice, and add to pan.

    To make sauce blend cornflour and paprika with soy sauce, worcestershire sauce,vinegar and reserved juice, add seasoning, boiling water and pour into pan.

    Bring sauce to boil, stirring continuously.

    Transfer all ingredients to slow-cooker, cover and cook 5-7 hours.


    Forgot to add that these are the quantities to fill the large 6.5litre cookerso use half quantities obviously if you've got a smaller cooker or want to cookless

    Haven't posted on this thread for ages but I usually do a monthly meal plan but have recently started to get a veg box each week so have had to rejig my plans for the last couple of weeks and again for this week to use all the different veg, so will be doing weekly again.

    This week's meals are:

    Mon - Chicken stirfry (uses some of the Pak Choi in box)
    Tues - Egg, chips, beans, mushrooms (uses some of the mushrooms)
    Wed - Pasata, sardines, broccoli & fennel (uses some of the fennel)
    Thurs - Beef stew and dumplings (uses mushrooms, fennel & pepper)
    Fri - Shepherd's Pie & veg (uses last of mushrooms, pepper & pak choi)
    Sat - Celeriac & smoked salmon gratin (uses half celeriac, other half for soup)
    Sun - Roast pork dinner (use any veg left from box, if any, plus some frozen veg)

    New veg box arrives Monday so will sort out next week's menus over the weekend once I've checked what will be coming then.

    Monday-Mexican scrambled egg -tomatoes+black pudding
    Tuesday-Take away (late meeting)
    Wednesday -Prawn Pad Thai
    Thursday -Beef stew
    Friday -Pork fajitas

    Breakfasts- cereal, instant oats, cereal bars
    Lunches- leftovers, fruit, BF works out his own. He doesn't like leftovers for lunch (all the more for me!)

    Sunday - Freezer Leftovers
    Monday - SC Caribbean Chicken
    Tuesday - Monday leftovers with jacket spud
    Wednesday - Stir Fry
    Thursday - Philly Pasta

    I've just adapted mine a little... Tonight will be leftovers from last night, as there's lots of it! Will serve up with a jacket spud :)

    Thought I'd throw in for our week, trying to get into meal planning!

    Tuesday - tomato pasta bake with chorizo, peppers and garlic bread.
    Wednesday - Frank's fried chicken with celery, blue cheese and salad.
    Thursday - working late so will have the last of Sunday's left overs (shepherd's pie)
    Friday - chilli, salad and HM tortilla chips.
    Saturday - Devil's sausages with apple sauce mash and veggies.
    Sunday - Roast veggies, yorkshire puddings and whatever joint's cheapest when I go shopping tomorrow :p

    This week we are having:

    Monday - Quick dinner night so had pizza, chips and salad
    Tuesday - Tuna pasta bake
    Wednesday - Beef kofta curry - trying a new recipe from Jamie's 15 Minute Meals
    Thursday - SC sausage casserole, mash and veg
    Friday - Chicken stirfry
    Saturday - Lamb medallions, dauphinoise potatoes and veg
    Sunday - Mini roast - roast chicken breasts, roast potatoes, veg and gravy.

    Need to get out of the rut of having the same meals each week, sometimes feels like and endless rotation of currys, spag bol, pasta bakes and meat/pots/veg!

    Last night's dinner changed to jacket potatoes with beans & cheese 'cos I was later getting home that expected and I can do jacket potatoes quicker than HM oven chips!

    Means I still got mushrooms to use up.
