Oh wow, CCP, that beef & spinach rendang sounds really tasty - is that a slow cooker dish as I've got a packet of stewing beef in the freezer and think that would be the most amazing way to use it.
OK, here's this week's mealplan:
Sat - jambalaya, as I've lots of things in the fridge to use up, including cooked chicken, an end of chorizo and some bacon
Sun - Roast Chicken Dinner, with Roast Potatoes, MiL's Recipe Bacon Stuffing, Chantenay Carrots, Broccoli and Gravy
Mon - Probably Chicken & Bacon Pie with Mash & Veg
Tues - Black Bean Pork with Noodles
Weds - TBC
Thurs - Chicken Curry with Rice
Fri - Meatball Sub Sandwiches with a little grated cheese to melt all over the meaty saucy spheres
Sat - Sausage Casserole with Mashed Potatoes
Sun - Meat Feast Pasta Bake
I'm making the meal plans a little longer at each end at the moment - things are really busy lately so routine is helping. There is definitely a plan to make some cookies while the oven is on and I might make some small carrot cakes for the tin.
Have a lovely weekend and week, everyone. Love reading your mealplans as you help me with my inspiration.

Have actually done a meal plan up until pay day based on using up. Next month I am determined to try something new as we seem to have the same things all the time:o This month has been a bit tight due to some re-stocking early in the month but i am hoping that with a bit of care we will be OKish.
Sat - Spicy pasta bake with salad
Sun - Spag Bol
Mon - Toad in the hole with roasties, veg and gravy.
Tue - Mac cheese, salad and HM garlic bread
Wed - Chinese chicken and noodles
Thurs - Risotto and salad
Fri - Chargrilled chicken with morrocan cous cous and roast veg
That will leave only a couple of days until pay day :j
Have a good week

I cook it in the oven as I don't have a slow cooker, but there's no reason I can see why it wouldn't work in a slow cooker. The sauce is, however, from a tub and not homemade, but I'll take the rare step of recommending a ready made product - it's from the Curry Sauce Company and it's just  - and probably cheaper than buying all the individual ingredients unless you make Malaysian food regularly.Back after a very long break!0 -

Hiya
The recipe is from the slow cooker recipe thread on here - here's a copy/paste of it
Caribbean Chicken
3 tbsp veg oil
2 large onions, chopped
4 sticks celery, chopped
3 carrots, sliced
500g mushrooms, sliced
2 red peppers, sliced
8 chicken joints, skinned
400g can sliced peaches
400g can pineapple chunks
10 tbsp cornflour
3 tsp paprika
3 tbsp soy sauce
3 tbsp worcestershire sauce
8 tbsp malt/wine vinegar
1 litre boiling water
salt & pepper
Fry onions, celery, carrot, mushroom and pepper in a pan.
Add chicken joints and fry until browned all over.
Drain peaches and pineapple, reserving juice, and add to pan.
To make sauce blend cornflour and paprika with soy sauce, worcestershire sauce, vinegar and reserved juice, add seasoning, boiling water and pour into pan.
Bring sauce to boil, stirring continuously.
Transfer all ingredients to slow-cooker, cover and cook 5-7 hours.
Forgot to add that these are the quantities to fill the large 6.5litre cookerso use half quantities obviously if you've got a smaller cooker or want to cookless*2016 - the year of the savings account!*
