... actually that carb/protein thing happens to me too... My weight used to fluctuate a fair bit... then I pretty much cut out eating refined carbs with my evening meal... I now eat wholegrain rice or pasta but no potatoes... make sure I have tons of fresh veg and some protein and it is so much more balanced now.

I realised alot of my weight wasnt actually 'weight' at all... I was just very bloated. If I eat pasta or white bread or rice now I get it... but otherwise it has hardly been a problem since taking real notice and care with my diet.

Increasing you intake of good quality protein is a very good idea I reckon... fresh chicken & fish (the best quality you can afford wherever possible - I save up and buy organic a couple of times a week rather than eat poor quality everyday), organic/free range eggs and perhaps subsituting red meat in some dishes (or at least trying to do half and half) with beans & pulses... kidney beans, chickpeas, butter beans, adzuki beans, lentils etc are all easily available in the supermarket and pretty easy to cook with...

I can highly recommend cous cous & quinoa too if you dont already eat them... so easy to make at home, very easy to make yummy and low fat so you can fill up on them... much better than nasty carbs. Delicious hot with evening meal and I make a large amount with lots of fresh veg and then bring it into work the following day for my lunch...
