What to do with bits of pork chop?

The sproglets have decided that they love pork escalopes.
On one hand I'm pleased as it's turned 'oh no not pork chop night' into 'woohoo pork escalopes!! you are the best Mummy in the whole world!' Yes they are that overdramatic
On the other hand once I've cut the eye of meat out of the chop I'm left with some scraggy meat in amongst the fat and bone. Do I have to throw this away, surely there must be something I can do with it?
Anyone got any ideas? If there was something I could do with it I could save the scraggy bits up in the freezer until I had enough.

How scraggy are we talking? I use small strips of pork in stir fries but they may not be big enough. Could they be used in some sort of stuffing if you saved up enough? Tbh sounds like a bit of a faff for such a tiny amount of meat...0

Have you got a slow cooker ? ... if so i think i would " save them up " in the freezer ... until i had quite a few ... then stick them in the slow cooker with a load of veg ... yummmmy ! ...terri x

Pork stir fry.
Slice the scraggy bits into batons and toss them in the freezer. When you have enough stir fry them with strips of cabbage, some onion, some mushrooms, strips of pepper and finish with some lemon juice and soy sauce. Actually, pretty much any veg that's in the bottom of the fridge that needs using up.
Personally I think pork + cabbage + lemon is one of the loveliest flavour combinations there is. But that might just be me :-)

Cook's perks. Or porks, as the case may be.
I have a really simple recipe for pork (chops, steaks, escalopes or whatever) cooked low and slow in cider with slices of apple on top. The cider tenderises the meat. I deliberately tested this recipe with the cheapest supermarket budget pork chops I could find and, as I lifted one of them out of the dish, the bone fell out of the meat and pebbledashed me and the cooker. So, no problem with "scraggy bits" as there shouldn't be any.
The alcohol in the cider will boil off during cooking, but don't tell the "sproglets" that and it might make them think that it's grown-up. I know the subterfuge it takes to sneak new foods into children (and some adults).If you fold it in half, will an Audi A4 fit in a Citroen C5?

Definitely the best bit, they would end up in my tum. I always snaffle those bits when I roast a pork loin before they can even hit a plate, it's my cooks treat, mmmmmmmmm.Accept your past without regret, handle your present with confidence and face your future without fear0

Slow cooked BBQ ribs - if you slow cook, the fat should melt away, and all the kids I know love a messy rib fest!0

Depending on how much meat is on them I would be tempted to make a sort of soup if its lacking huge amounts, with veg etc you would have some lunch's.Debt free :beer:
