I am currently Self-Employed and am putting £8000 away for tax in January.
Does anyone have any recommendations as to where I can put the money to get a good interest rate?
Or any other savings/investment plans? Obviously it needs to be safe as I need the money to pay the Gov.

Have you used your cash isa allowance for this tax year?
If not you could use the 60 day notice offer from the Coventry now?
You could put the balance in an Isa after 6 April? http://www.coventrybuildingsociety.co.uk/savings-and-investments/cash-isas/Cash-ISA/Cash-ISA.aspx

Investments won't be the right vehicle as you could lose some of the capital, especially over the short timescales that you are working on.
Look at the best current account section and stick it in there. 4% would get you £320 over a full year (of course it'd be minus tax)0
