I've found they are generally fine used after dates. You can tell if they aren't as they either separate a lot (sometimes giving a curdled effect) or taste sourer than usual.
If you look on this site they actually sell sachets past their best before dates:

Even at those clearance prices it's still a complete rip-off. 6kg of plain yogurt for £7 usually £15 =8O0

I bought the easiyo system with a bundle of clearance sachets. It worked out with the device and sachets that if I used it 40 times its only cost the same as the supermarket yoghut I was buying.
It fills a cupboard (with the boxes).
I used it regularly in the first few weeks. I then had inconsistent results with the sachets (only a month or 2 out of date) and got fed-up with it.
Not very money saving sat in my cupboard with supermarket bought yoghurts in the fridge!
Perhaps I'll have another go. Incidentally, it worked best when I sat it in the airing cupboard. Issue there is "out of sight, out of mind".0 -

I've not used the Easyo but I do make my own yoghurt using UHT full fat milk. I had a quick search and found this site, using the Easyo but not using sachets, also covers using UHT milk instead of heating up fresh
Could be an alternative option for you
