Cooking for diabetic (help!)

OP - He needs to be testing his blood sugar levels several times a day - first thing in the morning, before meals, an hour and two hours after meals. This way he can see how different foods affect his blood glucose.
It would also be a good idea to get a carb counting book.
He needs to avoid or cut down on high carb foods such as rice, potatoes, pasta, root veg bananas and bread. Good no / low carb foods include meat, fish, green veg and nuts.
Fruit juice (not squash) is poison to a diabetic - he might as well sit and eat a bag of sugar.
Exercise can also help bring bg levels down.
Is he on medication?
90% of people who get type 2 diabetes are overweight - if you want to avoid it lose weight now!0 -
I was only refering to type 2 diabetes. Not everyone who has type 2 diabetes is overweight but the vast majority are. It is not a coincidence that the diabetes epidemic has occured at the same time as the obesity epidemic. This is the first time in history that type 2 diabetics have greatly out numbered type1s. In countries that have a low carb diet eg Japan diabetes was almost unknown until they started eating western junk food. Some races are at a higher risk of diabetes than others eg black and Asian. If you have blood relations with diabetes you are more likely to get it.
There is lots of useful information on www.diabetes.co.uk especially the forums.0 -
wow, thank you all so much xxx yur magic ! I know what you mean re overweight yes, there is a proved connection (type 2 in later life) and he is a wee bit overweight.
His dad had diabetes as well. He's had 3 heart attacks so we are- or thought we were LOL- watching his diet. But the orange juice seemed ok since it was sugar-free and we didnt know about the ddiabetes then.
I am wondering hopefully if all this juice maybe gave him a false reading ? Is that possible? We see the doc on Thurs and will mention it to her anyway.
He isnt on medication as we just found out yesterday with the phone call, we see her on thurs.0 -
(((HUGS))) Mardatha, and thanks to all who replied to OP. My husband was diagnosed with Type 2 a year ago and i really panicked at first, especially as I've got M.E. and can't always cook a proper meal. He's disabled and gets DLA lower rate care component because he's not well enough to cook a meal at all! When I'd calmed down I realised it was much less of a problem than I'd feared, and now and then we go mad and have a "proper" roast dinner with the spuds roasted in dripping rather than olive oil. We both eat Pro-Activ Light instead of butter. I've found that eating a really healthy diet has helped me too, as i've got more energy. We eat granary bread or Low GI multiseeded bread most of the time, but somethimes have a white loaf for a change. New potatoes are better than mashed. We have couscous or rice or pasta.
When I make things using mince, I use less meat and make up the rest with red lentils, which provides more fibre and tastes nice too. At the moment I'm trying to get him to cut down on the amount of nuts and seeds he's eating, as of course theyr are very high in fat!0 -
What was his reading?0

Thanks nelly, he doesn't really need any care atm apart from the not being able to cook, can still just manage to do things like putting his socks on etc. He was awarded lower rate DLA as he "passed the cooking test", as they call it! He gets War Pension and has just applied for a review of that, as he's got worse, so fingers x'd0
