Should the dealer have asked us to sign something to say they offered it to us and we didn't accept it or is it just their word against ours?0

Yes, they should have asked you to sign paperwork confirming they'd offered you GAP insurance, you should have been given a copy.I hate football and do wish people wouldn't keep talking about it like it's the most important thing in the world0 -

I contacted the garage today to ask for a copy as I was not given anything at the time. I was told they could only see the signature online and could not give me a copy.0 -
To be regulated to offer gap insurance can be expensive so not all dealerships off gap insurance. For example there are a lot of very large car supermarkets which are not able to offer you gap insurance.
That said if they are regulated and able to offer gap insurance they would or should of carried out a needs and demands. This is a summary of you, your car and your needs and in it they should state that they either did or did not recommend gap insurance.
Not matter if you bought it or not they would or should then ask you to sign it. The idea is that if you are offered it and say no if ever you need to make a claim they can prove that you understood your options and declined the cover.
Just out of interest is there a reason that you want gap insurance now? Some providers will still let you take a form of cover. Just Google Gap Insurance.Happiness, Health and Wealth in that order please!:A0 -
Generally GAP insurance from dealers is terribly overpriced (though not as bad as it used to be) and so most are better off not buying and getting it elsewhere. Not all companies sell it because of the pain that regulation brought in with the FSA.
May be easier if you step back and say what the problem is etc0 -
