Are there any vegetarians here?

I think being veggie is really easy these days, even us vegans have an easy time of it now, it's just the changeover that feels weird in the first place. I wish I liked curries and similar though, very handy ways to get load of vegetables used up. I can't tolerate anything spicy. Quorn looks horrible to me. I love Linda M's pies, frozen vegemince for lasagnes etc, and just plain old tofu, which is lovely scrambled with a bit of soy sauce.0

I'm a lacto vegetarian who happens not to drink milk (not quite vegan as when I go to our paddy fields in India, there are cows that get milked if we want any, after their calf has had as much as they want, and they are not force bred or killed). Because I see them happy I'm happier to drink milk there. Not here as I've seen what happens

Weirdly I can't bring myself to eat eggs from friends' rescue chickens here even though they are happy and roaming about - perhaps because I've been lactovegetarian since a young child.
I do also agree it's very easy to be veggie in the UK, although I understand for non-veggie families, getting used to cooking veggie meals for a family member might feel a bit foreign to them, and be a bit of a challenge at first.0 -

1 packet of savoury soya mince.... soaked in hot water to swell up
1 finely chopped onion
2 finely chopped sticks celery
75g/ 2oz cooked lentils
small box s&o stuffing made up with hot water
s&p
1 beaten egg
Preheat oven to 190c/Gas 5
Heat some oil in a frying pan and gently cook the onion and celery until soft.
Put the cooked lentils into a bowl and add the celery and onions, stuffing, mince, seasoning and beaten egg
Mix well with your hands until everything is well combined, then press the mixture into a greased 1kg/2lb loaf tin.
Bake in the oven for 1hr
This sounds interesting. I'm thinking of making it, but without the egg as we're vegan. What weight of soya mince are you using? Is it a particular make? Will any type of lentils do? Presumably the stuffing holds it all together, so the lentils are for taste and texture and not for binding?0 -
