Being veggie can be challenging, so I'm always on the lookout for new recipes and some good ideas above. Some meals that are favourites of mine that come and go with the seasons. I almost always cook from scratch and seasonal veg if I can and though I enjoy cooking hate slaving over things so my meals lean towards quick and easy:
Pasta a la Norma with a side of Caponata (Jamie Oliver caponata recipe is good but Montalbano caponata tops!)
Vegetable Tagine with herby couscous
Paneer Pea and Potato Curry with turmeric rice
Quesadillas with Avocado Bean Red Onion and Chilli Salad
Roast Veg (potatoes, carrots, celery onions fennel etc) with thyme and Lentil and Nut Loaf and Veggie gravy
Vegetable fand Bean Cassoulet served with Goats Cheese,Onion and Thyme Bread (Delia)
Frittata served with Potato Skins with horseradishy dip and a fresh salad
Rissotto (I make a variety, love butternut squash and sage, or stilton mushroom)
Aubergine, tomato and parmesan bake, caponata, with a big salad
Spinach, Mushroom and Mozarella Lasagne
Veggie Springrolls, chow mein and egg fried rice
Puttanesca pasta (Nigella's sluts pasta sauce is pretty good)
Stuffed peppers with tomato sauce with creamy mash or rice
Shepherds Pie (made with Quorn mince) and plenty of fresh veg (baked caulif/brocc in cheesy sauce for comforty food)
Veggie casserole with herby dumplings
Burritos served with Mexican Rice and Roasted Garlic/Tomato Peppers
Sausage cassoulet (quick and easy - baked beans, tin toms, fried onions, nice veggie sausages grilled and chopped all mixed up and baked) with mash
Veggie Puffs (roast vegetables wrapped in puff pastry and baked) or Brie and caper Puffs with anything you like
I'm also a Quorn fan, especially the mince, very versatile. Can make anything from shepherds pie to meatloaf and meatballs ...
In winter there is always a big cauldron of soup on the go as well to fill a gap. Veggie soup or minestrone or broccoli and bean or a hearty dal.
I nearly always use fresh herbs but it makes all the difference I think and well worth it. Love my food LOL

Interesting to read all your replies - thank you. My OH keeps telling me he wants to cut down on red meat, however, when I leave out meat, he says "this would be nice with a bit of meat in it" - can't win lol.
I'm going to come up with a veggie meal plan for next week and see if anyone notices. I'm thinking:-
Curried Nut Roast with ratatouille and garlic roasties
Quiche and salad
Veg tagine with halloumi and couscous
Quesadillas/nachos with refried beans, cheese and salsa
Curry with chickpeas and cauliflower
Broccolli and stilton soup with HM bread
Tortilla with beans
Veggie bolognaise with pasta
Wow - it takes me longer than that to come up with my meat menu plan normally.

I love nut roasts. Love them.
And another vote for Rose Elliott's recipe books. Some really fantastic recipes, and some of them really quite simple and easy to make. I got her "Complete Veg Cookery"book for a quid in a charity shop not long ago. Just leafing through it gives such inspiration. Also Claudio Rosen's Mediterranean one.
I don't claim to be a proper vegetarian, because I'm not. I just love dairy, especially cheese. Which I will not give up. Nosireebob. Not ever. Never.0 -
fry a chopped onion and diced aubergine for a couple minutes, then add sweet potato cut into chunks, cook in curry sauce (I use sainsburys basic one|) this makes a quick yummy curry.Sealed pot challenge member 4370

what do you mean "proper vegetarian". Vegetarians still eat dairy.
It's a vegan diet which has no diary products.
I'm a pescetarian (vegetarian who eats fish). This is purely because I think I need fish in my diet.0 -

Our usual curry includes onion, pepper, mushrooms, courgettes, cauliflower, broccoli but no potatoes. I also add a tin of tomatoes.0 -
Hi, me and my son are vegans. I make a lot of veg lasagnes with either a plain white sauce or add in some vegan 'cheese' (e.g cheezly).
I also like making shepherds pie with either veg 'mince' or lentils (or both), simple pasta dishes with basically veg and lots of chopped fresh veggies.
We have burgers - the packet mix ones are cheap and delicious, and can made a bit more healthy by adding salad - and also make veggie pasties the cheats way using jus rol pastry

If you google parsley soup there's a great recipe site there with delicious meals which are easy to make

I'm a pescetarian (vegetarian who eats fish). This is purely because I think I need fish in my diet.
Depends a bit, some people call it 'pure vegetarian' when all animal products are excluded. Veganism adds in the avoidance of all cruelty, e.g leather etc, as much as practially possible. The dairy industry is extremely cruel, unfortunately
