I'm a real wuss when it comes to keeping things in the fridge and I would have thrown that stock out by now, but as I say, that's just me, if everyone else says that you keep stock for a week and it's OK then it must be, I've never done it so I can't say can I? perhaps if you give it a quick boil before if goes in the SC it will be better than if you brought it to the boil slowly in the SC
I am a bit like that with stuff in the fridge, but after reading it can last a week, then I might give it a go.. however if it seems to smell a bit suspect then it will go straight out.
Will try heating it first and go from there.

Oh! I was doing my best to be good and make chicken stock out of all the remnants of my roast chicken, but it went a bit wrong. i put it in the pan covered with water and boiled for about an hour and a half, checked on it occasionally at the beginnning and then just let it boil. The lid was ON the pan. Now i went to strain it and all the water had gone!!!! It cant have all evaporated out with the lid on can it???? i mean literally a big panfull of water down the lass then half a pint. what happened?????
Anyway, i panicked a bit, so i put cold water from the tap :eek: in with it all and then put it back on the hob to heat up again so i'd have more, but in hindsight that was probably stupid and so i added some hot water from the kettle too.
Have i done it all wrong??? Will it still be ok despite my what i did???

I'm sure it will be usable
but it may not have as good a flavour as it might have done.
Next time don't boil it for any length of time. Bring it up to a boil then turn right down to a simmer and cover. I let mine simmer for a couple of hours.0 -

It was simmering, but i put a lid on it as i went to cook/eat my dinner, and the lid keeps in the heat so i guess it started boiling again without me realising, as what little was left was bubbling when i looked. Oh silly me!!! Didnt think to turn the heat down when i put the lid on! Why do the most obvious things escape us sometimes, even when normally we dont have to think twice about them??!!!
I was going to keep it in the fridge once done, and reheat and use for chicken risotto tomorrow, do u think it will still be ok to do that??Moneysavinghopeful :rotfl:0 -
