I've made quince paste/butter and it tasted like fizzy apple or pear.A really nice thing to make as you can't buy it. Not in my neck of the woods, anyway.

I am led to understand that they are very sharp and tart, and you have to cook them with a lot of sugar at which point they are very nice (so I am told).

I definitely would not eat a raw quince, G :eek: Cooked with lots of sugar they make a delicious chutney-type jelly, gorgeous with a very mature cheddar . Happy cooking
