What's he fed on? Some foods can cause hyperactivity. OK, he's still a 'teen' at his age but a little old to be 'manic' unless he's really lacking in training or mental stimulation.

Perhaps a word in your son's ear about doing some training centering around calm behaviour, self-control and appropriate interaction with other dogs (many trainers will happily use their own dogs as stooge dogs for this purpose) when he's back, to save your dogs some stress next time you dogsit, wouldn't go amiss!

I think it's Autarkey complete dry food - they sent it all ready bagged up.

I just found another way to calm him. Got him to roll over and stroked his chest gently and he zonked out and slept for an hour!

Possibly the excitement of being with my dogs sent him over the top - he might chill out a bit as the days go on. Hope so anyway!
