    I would imagine you could use stewed apple in place of banana in recipes as that is also moist. Really I'd just make the mix up and if it seems too soggy, add more flour. If you have a lot just experiment. Good luck!

  • My freezer is full of stewed apple from my nan's tree. I usually defrost a bit and squeeze the excess water out so as not to make the cakes to soggy. This is a good one to make...
    Apple and oat muffins

    1 cup plain flour
    3 teaspoon baking powder
    1/2 teaspoon cinnamon
    1/2 teaspoon salt
    1/4 teaspoon nutmeg
    3/4 cup oats
    1/4 cup sugar
    1 egg
    1/4 cup oil (do not use olive oil)
    1/3 cup milk
    2/3 cup stewed apples, apple sauce or apple pie filling (I use lidl applesauce)


    Mix dry ingredients together. Mix all wet ingredients together seperately. Roughly combine the two mixes until it has just mixed and no more. The mix should be lumpy, it makes a better muffin. Pour mix into lined muffin tray and bake at 190oc or gas mark 5 for 20 mins or until risen and nicely browned. Allow to cool on rack before storing (if you have any left!!)

    Makes approx 6 - 12 muffins depending on size of muffin tray used.

    Thanks folks, lots of ideas - should us up the rest of the apples - not very good for the waistline though but I cant use up leftovers and diet!!;)

    I have 10 days to run down 2kgs of stewed pears in my freezer.

    Does anyone have any ideas for different recipes, preferably those that will keep rather than have to be eaten quickly? I saw this recipe from Delia on TV the other day, something I can share amongst others as a teatime dessert would be great, but I just don't want to add a load of fat to the ingredients.
