How to use loads of stewed apple

I have loads of stewed apple in the freezer and I want to begin to use it up any ideas. I have done the usuall apple crumbles and pies but want to try something different. Does anyone know if I could use it in muffins maybe apple and cinnamon and if so is there a recipe? Thanks for any help.

Hi, I use this recipe http://www.deliaonline.com/recipes/blueberry-and-pecan-american-muffins,1274,RC.html as a base (leaving out the pecans), use the same weight of stewed apple as the recipe suggest for the other fruit. For the topping I just use a little brown sugar. They always come out lovely. Hope this helps.

I like to make apple crumble using a thin layer of flapjack as topping rather than crumble.

I had a biscuit recipe where stewed apple was used instead of marg. I've just looked for the recipe (it was from the Graun) which also had grated carrot, oats, flour and raisins and lots of spice but can't find it online. Anyway, it was good and the biscuits had a chewy cookie texture.

I'm no Delia but I often make a variation on Apple Brown Betty which my Mum used to make when I was a child.

Breadcrumbs mixed with veg suet and sugar (same amounts as for a crumble)
    Stewed Apple
Butter to dot over the top

Layer the mixtures in a deep dish eg layer of apple mix, layer of breadcrumb mix, layer of apple mix etc, ending with a layer of breadcrumb mix. Dot the top with butter or margerine. Bake in a moderate oven (I cook just about everything at gas mark 4/5) until the top is brown and crisp. It's a lot lighter than crumble and is lovely with loads of custard and/or ice cream.

Apple Lemon Meringue is one of my favourites. Make lemon meringue pie, but use apple as the base instead of pastry.

I have a pressure cooker sized pan of stewed apples and having saved some for crumble, some for sauce, still have loads left.

I was wondering if I could use the stewed apples in muffin/loaf receipes? I have loads of receipes that used apples but they are usually sliced or chopped - not sure if the stewed apples would leave muffins/loaves soggy?

Anyone got any ideas - am having to do loads of baking for a picnic at the weekend so if I could combine the apples too (was thinking of doing banana loaf and muffins) - this would be great!

    Thanks in advance,
