1 punnet raspberries
4 crunchie bars
500ml double cream
2 chocolate flakes.

Whip the cream till stiff, smash the crunchie bars to bits and stir into cream.
Put a quarter of the raspberries into each glass top with the crunchie/cream mix and stick a half a flake in it.

Try this:
Impossible Pie
1 cup sugar 1/2 cup plain flour
1/4 teaspoon baking powder pinch of salt
2 tablespoons melted butter 2 eggs
1 cup milk 1 cup coconut
1/2 teaspoon vanilla

Mix sugar with flour, baking powder & salt. Add melted butter. Add 2 well beaten eggs and milk. Mix in coconut & vanilla. Pour into greased pie plate and cook in moderate oven for 30 - 35 mins.

NB: The reason it's called Impossible Pie is that when it's cooking it makes it's own pastry layer, it's own egg custard layer & the coconut rises to the top making a topping layer. How clever is that.

If you post up the recipes we might be able to see if anything was dodgy.

• I really wouldn't waste the electricity/gas boiling a sponge pudding for 2 hours or more, you can do one in a few minutes in the microwave.

And now the final frame

• There's a recipe knocking around here somewhere for a microwave steamed pud - and loads of variations from syrup to chocolate to jam. Totally converted me, and I'm not a microwave fan at all. Far too tasty though, unfortunately for my waistline!

Soften some vanilla ice cream

Get four after eights per person

Make a square of the ice cream and after eights.

Top with grated choc/raspberries.

Dust plate with icing sugar, throw a few rasps down and a bit of cocoa powder.

Jamie....eat your heart out!

And....no cooking!

Microwave steamed pud:

4 tbsp SR flour (replace 1 tbsp with cocoa for choc sponge)
4 tbsp sugar
4 tbsp marg/butter (approx)
1 egg
dash of milk
few drops vanilla essence (optional)
'some' jam/syrup/choc spread/stewed fruit etc for topping.

Mix together the marg and sugar, then stir in the flour and egg. Add a little milk to thin it to a thick pouring batter. Put the topping in the bottom of a pudding bowl and pour the sponge batter on top. It will rise a lot, so better to have a big bowl rather than one that's too small. Microwave on high for 1 min, then check. Microwave in short bursts of 20-30 sec until the top is only just set. Microwaves vary so much I can't give an exact time, and it also varies according to the amount of milk you've added.

To serve, turn out onto a nice plate if you care about presentation, or just dig in and spoon into serving bowls if you don't. Serve with custard and/or cream as you prefer. Serves 2 greedy adults or 3 sensible ones!

Have you tried Mars bar sauce hun? perfect topping for ice cream!
just melt a Mars bar in a small carton of cream, let cool and pour over your ice cream - you can be really naughty and put chopped salted nuts on top (my fave - it tastes divine) or choc sprinkles or sugar strands! super easy dessert! and a real fave when my kids were small.

Thanks for that. I used to make them regularly when children were at home but when they left and DH and I ate their portions, waistline suffered!:rotfl:

Does anyone have a recipe for suet steamed pudding in the microwave?
