Hi everyone
My new years resolution was to make my own desserts to follow sunday lunch well five weeks in and its been a disaster.
Ive tried steamed syrup sponge, 2 cheesecakes, chocolate mousse and today gooey chocolate pots all of which has gone wrong.
Have you any FOOL proof dessert recipes that are quick or can be made the night before.
I'm determined not to give up on my new years resolution

I've made this chocolate tart dozens of times, not once has it gone wrong, it's totally delicious and would be perfect to make the night before, it really does come out looking just like the picture. It also makes a good size tart that lasts us several days.
I tend to use three different colour chocolates for the drizzle on top (I always use Sainsbury's basics at 30p a bar), I think it makes it look even nicer.Accept your past without regret, handle your present with confidence and face your future without fear0 -

Eton Mess, easiest thing in the world to make!
Bannoffee Pie is also really easy, I buy the ready made tin of caramel, the recipe is on the side of the can but it's pretty much foolproof.0 -
Thanks sweeme. My son does like eaton mess so that will be a good one to try. XI'm trying so hard to be thrifty, but it doesn't come naturally. You lot are an inspiration!JUST LOVES THE O/S BOARD0

don't give up - gooey chocolate pots (chocolate fondant) has seen off many masterchef contestants! Try for something a bit simpler to start.
Cheesecake: digestive biscuits 200g (smashed up to crumbs) 80g butter melted. Stir biscuits into butter, mix well until biscuits coated, then pour into 8" (loosebottom or springform tin) press down well, chill for 30-60 mins.
300g cream cheese, 150ml double cream, mix well and add juice of 1 lemon to thicken, mixing well.
When fairly thick pour onto biscuit based and chill for about 2-3 hours or overnight.

assemble only desserts?
do you all like treacle tart? easy to make and yes you can make it beforehand (but hide it as it will disappear otherwise.
Recipe
8oz shortcrust pastry (some people will bake this 'blind' beforehand but I dont bother)
a good mugful of white breadcrumbs. (very mse to use up all the stale bread
a few tablespoons of golden syrup
tablespoon of lemon juice (optional - mum uses it, I dont and cant tell the difference)
make your pastry or roll out ready made and cover a greased plate with it (make sure the plate is ovenproof).
scatter the breadcrumbs evenly over the pastry avoiding the very edges
drizzle enough golden syrup over to soak all the breadcrumbs and drizzle lemon juice over as well.
bake in a medium oven until the pastry is golden and the filling is all bubbly hot.0 -

Try this cheesecake recipe. Probably the easiest one ever and perfect every time. I use frozen raspberries.

This is also superb and very very easy.

Trifle is pretty easy to pull off too, some jelly with sponge in topped by a good custard, packet stuff works well but not the instant stuff, then topped with some whipped fresh cream with a dash of chocolate sprinkles.0
