Surely cakes need to stand so that the moisture content levels out and flavours develop? My grandad was a baker and confectioner and always advised that cakes should be left to develop. Even if you somehow wanted a just out of the oven taste, a few hours will make no difference.
  • It wasn't a few hours it was a day. The point I'm making is that when I asked, I was told A when in fact it turned out to be B, and if it tasted ok then I wouldn't have an issue, but it didn't and they know it didn't hence the offer of the replacement cakes which I couldn't get... The shop is not around the corner hence the need for the delivery.

Maybe I didn't make it clear... The reason for my complaint was the the cake was dry, more so the mini cupcakes. I was not complaining because it was delivered earlier than my allotted time of 12-2pm. And I said in my email to them it was dry.

The website ( and other cake makers of this type) all state it should not be kept in fridge.

I was told, that the cake would get baked last thing late afternoon on the Friday, left to cool and then iced

the baker explained it was all done and ready from the Friday afternoon?!?

You expected the cake to be baked Friday and iced Saturday. In fact it was baked earlier on Friday and iced the same day. It's not a day; the cake itself was baked a matter of hours before you expected.

Now if the real problem here is the quality of the cake, why bring up all the extraneous guff about times?

In any case, you've really left it too late now to do anything about the quality - you'd have needed to take it back to the shop pretty much immediately for anything to be done.

I don't know why more people don't make their own simple cakes for birthdays. I always made my own cakes for my children's birthdays when they were at home.

For exactly the same reasons they don't make their own furniture, knit their own clothes, etc. Sometimes you just want to buy a product.

So someone left the cake out in the rain and you don't think that
you can take it because it took so long to bake it and you'll never have that recipe again.... oh, no!

with butter cream cakes you cant leave in the fridge also

Where on earth did you get that from? Of course they can be refridgerated.

When I make cakes it's a 3 day process, for a caked to be ready for a Saturday (which is when you wanted it delivered) the cakes would be baked on the Thursday afternoon wrapped and refrigerated overnight, Friday morning they would be filled and crumb coated with buttercream and refrigerated, Friday evening/Saturday morning they would be decorated.

    Am I missing something here??

Yes, you can't bake, cool, fill, crumb coat and decorate a cake all on the same day and expect to get a decent finish.

A buttercream iced cake wouldn't be baked on the Friday if it was dry by the Saturday, madness. I made a Victoria sponge a week last Monday and it was still moist by the Sunday. Also have to add it took me a whole 10 minutes to make and cost me hardly anything.

And I'm sure you don't know what you're talking about. You have no idea of the size of the cake, what it looked like, who the son is, how well the OP can cook, or a myriad other factors.
