Backing up iPod & copying info to laptop

Hi
Please excuse me & my limited techie knowledge!
I have a 4th gen iPod touch. I have taken numerous photos & video clips which I would like to save to my laptop. Is this straightforward???
Also, I would like to update to iOS 5. If I do this (not that I really know how!!) will I lose anything currently on my iPod ie the photos/videos I've taken; apps; music etc
Any help gratefully accepted.... as idiot proof as possible please

only thing to add, is the latest OS is IOS 6.1.0
