I went back to uni when my son was a toddler. It wasn't a walk in the park but very do-able -some unis are far more Mum friendly than others though-as a parent I got to choose tutorial times (nothing worse than a lecture at 9 then nothing til a tutorial at 5pm) that fitted best whereas a friend at another uni got no consideration. I think everyone would like to work from home (I do it at the moment -it has some great points but the work/home seperation thing is tricky especially with small children) but you need to know what kind of business and have a realistic business plan as a huge number of small businesses fail in the first year often down to lack of planning or research.. A full-time degree AND more childtime AND starting a new business (a fulltime proposition in itself sometimes) might be stretching yourself a little too thin ?

I know you might not have much time now, but have you considered the OU to retrain once baby is a little older?
In my opinion, I'd stay while they are handing out free money, and use that time to explore your options. I would also suggest speaking to your partner, surely he loves you and wants you to be happy?
