Help from OS cooks needed

Hi everyone,
I am trying to get back in to OS living (fell off the wagon a bit at Christmas).
Anyway this weekend I have worked out a budget, put some seed potatoes to chit, bought the seeds for growing veggies etc. and done this weeks meal plan :T - except for tomorrow's dinner.
I have 325g of leftover roast chicken and want some recipe ideas to stretch it out to feed 3 tomorrow night.
My store cupboard is well stocked and I have some sweet potatoes, parsnips, onions carrots and a few French beans, tomatoes .
The obvious would be some kind of stew, but I have already made a stew for later in the week so want something different?
All ideas and recipes greatly received.

Hi there... How about a version of a shepherds pie?
Make a root vegetable mash with the sweet potato, parsnip and carrots...
Saute some onion until browned, add some flour, and then some chicken stock to make a brown roux sauce, add some mixed herbs, top with the mash
Heat in oven
Serve with the green beans

Chicken and mushroom lasagne?
Or I often make chicken quaesadillas with a small amount of left over chicken. You fry some onion and (I usually use green peppers but you could use your green beans) in olive oil and season with salt and pepper. Then put a tortilla in a dry pan, cook for 2 mins, sprinkle with the chicken and veg mixture and top with grated cheese and another tortilla. Press the top tortilla down and flip the whole thing over carefully and cook the other side for another 2 mins. Serve it with your sweet potato done as wedges, some sour cream and maybe some salsa made with your tomatoes and an onion.0 -
We like to use up our chicken in quesadillas (as above) or in stir-frys with lots of veg.
I like to make nasi goreng (fried rice) or mee goreng (fried noodles)- I usually pick up the seasoning packets cheap from @ldi or l1dl.
Another favourite is Pad Thai, using shredded veg like carrots, onions, cabbage, fried off with garlic and chilli and a mix of tamarind, fish sauce and sugar. Then mix in hot cooked noodles and left over chicken, crack an egg into the wok and stir until it's all coated. Serve with crushed peanuts, chopped coriander and spring onions, and chilli sauce. The egg and peanuts mean that you need very little actual meat in the dish and it's still super filling.0 -
Could you make a chicken pie? If you make a pastry top and bottom it would feed at least three.You could add mushrooms, leeks, bacon or even sausagemeat balls if you have them,0

I would be drawn to a risotto.
With the chicken, onions, and beans, with some crusty bread. Lovely.Opinion on everything, knowledge of nothing.0 -
I have only just decided on what do with todays leftover half a roast chicken. Its gonna be Chicken and Leek Cheesy Pasta! I have two leeks leftover from Stew.
Recipe is
Cook about a cereal bowl ful of dried pasta shapes (sorry, but I always measure pasta by cereal bowl)
Sweat the sliced leeks in a little (very little) oil and add to cooked pasta.
Strip chicken carcass and chop the meat roughly in big chunks. add to leeks and pasta
Make about a pint of your favourite cheese sauce.
mix it all together and season with black pepper.
Turn into a casserole dish
Top with fresh breadcrumbs and grated cheese or just grated cheese (tomato slices go nicely on top too).
put into a medium oven for about 35 mins or till nicely browned on top.
this will serve two hungry navvies or four normal sized appetites!0 -
That sounds very nice meritaten. I don't have any left over roast chicken but I have half a pack of raw chicken thighs in my freezer, and some leeks in my fridge which need using up, so I think that might elbow its way onto my menu tomorrow, displacing the lamb chops I had planned0

I came back to say that you can leave the leeks out - its called 'Lonely Chicken Cheesy pasta' then! but, if you have some mushrooms make a white sauce, cook the mushrooms and stir that into the chicken and pasta and bake!
I always struggle to find recipes with leeks - Aldis sell them in packs of three or four - and thats too much for my stews!
