Seasonal Veg in May.

I am really at a loss how you can do favourites like Curry and Pasta dishes with what is in season in may

The Asparagus season. The first Broad Beans, Spinach, Sorrel and Primo Cabbage.

None of those seem to lend themselves very well to those sorts of dishes.

    Spinach in curry is lovely! Lamb and spinach is my favorite actually. So there you go :)

    Mmm, Sali_mali, good call. Lamb and spinach curry is gorgeous, not that I have ever made it but I have had it at restaurants and also friends of mine have made it for me, very good!

    Studentphil, new potatoes and cauliflower are in season in May so you could have a potato and cauliflour curry (aloo gobi), also very tasty if you season it well or a spinach and potato curry is so tasty and even I can make it! Egg and potato curry, potato and chickpea curry. Lamb and potato curry. Cauliflower and pea curry.
    I have quite a few friends who like cooking, good job too cos I can't stand it!
    I really fancy a curry now! Yum yum.

  • Pasta bake on a bed of spinach.

    Broad beans and bacon pasta.

    Asparagus and salmon pasta.

    Ham & Spinach lasagne is good (and saves all that faffing cooking the mince) - just need sieved tomatoes for the red sauce and white or cheesy sauce and layer everything up. So easy even I can make it.

    Spinach and tomato pasta is really tasty. All depends on the seasoning.
    Could have it with just spinach and tomato or you could add sausage or chicken to it.

    there's a link here to this site for Leek and brocolli pasta bake - it wouldn't be too hard to make other veg instead of leek and broccoli. Broad beans would give some green colour to the dish, i'd add onion and maybe a red pepper for flavour (and other colour), you could chop up some small cauliflower florets as well to help bulk it out. just saute the onion and pepper in some oil first, and maybe partcook the cauli in boiling water for 10 minutes before adding to the bake. Otherwise.. follow the recipe, just substituting ingredients.

    whats the curry called thats made with spinach and cubed cheese. Its a soft motzarrela type cheese, gorgeous mmmm!
    Also an Italian friend of mine makes a big pot of cauli&brocolli cut up and boiled almost to a puree, then throws in the pasta, dry, and cooks it all together. Sounds not so nice but tastes lovely, think he puts a bit of oil and garlic in the pot first though

    As others have said, spinach is great with curry. Chicken Saag(spinach) is my fave dish in fact. You should give it a whirl!
