Can I trust updates?

This has probably been asked a million times before but I'm fairly new to all this so please bear with me.

How do I know that when I get one of those regular popups declaring... "updates are ready for my computer, click here to install" some government busy body secret service department isn't trying to tap into my activities. They poke their noses into just about every other corner of civilised society or would like to so what's to stop them from doing it this way?

    this is purely critical (security weakness in windows Xp or Vista) updates, up to you if you want to use them (you can turn them off) but I would not do online banking or shopping without them
