Using the scientific way of working out if its ok and checking that Appr0ved foods have ginger cake for sale best before Nov 2012. So bearing this in mind yours will be fine.

I have used this as a base before, left out the stem ginger and didnt ice it.
I like it left for a couple of days as I think it improves the flavour.
But I prefer Yorkshire parkin to ginger cake.

Given the last one I ate was about 18 months past its best before date and noone died.. ok so OH and I ate the whole thing between us.. we warmed it in the MW with a small amount of hot water which did seem to restore some of the moisture, he had his with custard (barf!!) and I had mine with ice cream.. nom.. it was a tad dry but quite edible. I think we have another rather squished one upstairs at the moment.

I can't believe it! Am I hallucinating? Do people actually keep cake (or anything sweet) long enough for it to go out of date? I think that I have strong willpower when I buy sugary foods and don't eat it somewhere between the shop and home.0
