Single cream over the warmed cake would also be acceptable.

Garnish with a few scrapes of lemon zest if wanted.

You could also turn it into a new cake by splitting it, filling and icing with buttercream, garnish with crystalizzed ginger diamonds.

Or inject it with dark rum and use as trifle sponge.

Yes it's ok to eat I've bought cake in a shop where they sale food deliberately past the sale by date and everything still tastes nice some even taste better past the date. Lift the flap of wrapper jamacia cake wrapper and it might say mcvities vip club underneath could enter the code online and get points towards things.

Ginger trifle! A friend makes this with ginger cake soaked in booze of your choice, tin of mandarin oranges , custard and cream ....mmmmmmmmmm
