Great idea for mixed leftovers...well I think so anyway!

Hi all, just thought I'd share this with you, and I hope it's useful.
It is probably good for a singleton or couple really.
Anyhow, I am here on my own at the mo, so don't buy huge amounts of food. I had family over on Sunday, and cooked a stuffed boned and rolled FR chicken with all the usual trimmings, veg, gravy, roast, mash, extra stuffing and so on.
There were bits of everything leftover (in their individual dishes I might add, not scraped up off the plates, that was polished off!)
So I had a look, and there was not enough to make another meal.
So I had a think. Then I had a glass of wine, then another, from the last bottle left on Sunday. Then I had a brainwave, or I was tiddly. Probably tiddly!
I chopped up everything, the bit of chicken, the stuffing, veg, spuds, roasties, gravy, everything.
Put it into the blender with a bit of garlic and onion powder (forgive me that), s and p, and an egg.
Pulsed a bit till I had the consistency I wanted.
Shaped into patties and chilled. Then dipped into flour egg and breadcrumbs and lightly fried.
OMG it was gorgeous. I got five patties from it. Yum yum.
I hope no one finishes my food again!

Ah yes, maybe. But I was tiddly at the time, and what the hell, the result was great!

BTW I live in Ireland (no horse burger jokes now!), and we don't tend to use the term bubble and squeak. Just chuck it all together and eat the darned thing!0 -
This is something I often do, normally not enough to feed the 4 of us so I blitz everything down and bung it in the freezer, when I've got enough it gets defrosted, shaped into patties and oven baked with a drizzle of olive oil, served with relishes and a bit of salad, or with onion gravy/cauli cheese. In the 60's when the kids were small and times were hard I used to do this with whatever was left in the fridge at the end of the week. I then used the mixture as a filling in a pie to have with veg and gravy. OH used to love it and asked for it to be made again but of course it couldn't be because the leftovers were never the same 2 weeks running.Mortgage and Debt free but need to increase savings pot. :think:0

I make roast dinner pie/plait/pasties if there is any of the dinner leftover.
If I have mashed potatoes and peas left over they are smooshed together, fried both sides and served with a fried egg on topBlessed are the cracked for they are the ones that let in the light

yay good old bubble and sqweak, whatever leftovers bunged in a pan and fried to brown with a sunny side egg on top and beans on the side - yum.

I think I did a good poetic version of bubble and squeak there!
Sorry, but as I said earlier, here in the Emerald Isle, we don't use the Bubbley squeak term.
Sorry if I came across as knowing something new, But I thought I did!
Back in my box now, and a bow to the veteran bubble and squeakers on here!
I still love my concoction though, and will add a fried egg and baked beans next time!
