Cooking chicken drumsticks the night before?

I have to contribute to a funeral tea this friday, and I'm hoping to do chicken drumsticks as part of the food avaliable..I will have so much to do that I hoped to cook them the night before and refrigerate, would this be ok?

    Well, you can buy them precooked and refigerated so I cant see why not?

  • Yes, that is absolutley fine. When you take them out of the oven put them on a clean dish and cover tightly to prevent exposure to too much air. When cool enough put into the fridge until you need them.
  • No problem. I have catered many a party and they are fine, just cover in foil first or the fridge will smell mighty chickeny.

    Thanks, I just don't want to be hurting anyone, I guess quiche would be equally ok cooked the day before? xx

    Butterfly, have you ever catered for a funeral tea? if so any ideas on quantities, this one is for 50, and while I'm not cooking all the food I am responsible for organising and making sure there is enough, any advice greatfully recieved!

    Pipkin, that could be a whole thread on it's own.

    Time of day, average age of attendees.

    Old ladies that eat like sparrows, eat like hawks at a freebie funeral tea.

    You mention "tea" so I'm guessing an afternoon funeral, so get together at 4 or 5 o'clock. If all live locally they should have had their own lunch.

    4 sarnies per person, ie 2 pieces of bread, cut into 4 triangles. - so 5 sliced loaves.
    Fillings - old teeth and dentrues - egg mayo, grated cheese and onion, shredded meat (ham, chicken) and salad, salmon/tuna mayo with chopped cucumber.

    Maybe a few sausage rolls (50)

    8 quiches

    Pad it out with nibbles of crisps, nuts.

    Also offer grapes, cheese and biccies. cut the cheese into slices for them.

    As the savouries disappear put out cakes, biscuits and offer more tea,

    As for beverages, keep the tea on intravenous drip, so for 50, get at least a box of 160 bags.

    If it doesn't look that much, put the table across the shorter end of the room ;)

    No matter how well you do, you will be judged by old ladies.

    The funeral is at 1:30, and we will all be back at the house by about 2:45 I've been told.

    We don't actually know who or how many are coming but have just been asked to cater for 50.

    I've maybe gone a bit over the top (but would rather have too much which can later be shared out if left) than too little.

    So, there will be 4 diff kinds of sandwiches - 2 triangles of each per person (ham, cheese, egg mayo tuna mayo), a square of pizza, a slice of quiche for all, sausage rolls (3 cocktail size each), coktail sausages, a chicken drumstick, cheese and crackers and lots of home baking, tea/coffee/juice, so it doesn't sound to far away from what you've suggested.

    (I was told no crisps, salad or nibbles so have honoured that).

    If they judge me I don't mind, as long as the family are happy xx

    That's the trouble with funerals, you don't know numbers. When I did my Mamma's one, I did sandwiches, chicken, quiche, sliced meat and salad. As it was also January (next week actually) I asked some neighbours to do tea and coffee and to boil some new potatoes as well, so there was something hot to eat. (I left them ready on the stove) I also provided beer and sherry if people wanted it. Some french fancies and fairy cake went down well with the old aunts too.

    I would have liked to have had salad, potato salad and coleslaw there too but people felt it was inappropriate so I had to respect that even though I disagree.
