With due respect to tiff, the OP of 'In my Slow Cooker today ..........', and noting recently how many people have said they've got Pressure Cookers - as well as all who've said they're interested in getting one - I thought I'd start this thread, just to see if it 'takes off'.
So here goes ........................ what have you got in yours today?
In my PC today, I've got a batch of soup that consists of chopped 'bendy celery', sliced wrinkly leeks, diced onion, cubed potato, soup & broth mix and some chicken stock - a by-product of my last roast chicken
. When it's finished 'hissing', I'll check it for flavour and add some herbs, perhaps more flavour in the form of stock cubes and maybe some tomato puree (already frozen in ice cube tray and stashed in freezer).

I wouldn't be without my pressure cooker (now 40 years old !) for making stock. This makes the most wonderful base for all kinds of soup from chicken carcases or ham hocks. The stock is wonderful for making delicious risottos too. I haven't used it for a long time for making caseroles & stews though as I think a slowly cooked meat caserole in the oven produces more tender meat. However, a pressure cooker caserole using a gas hob probably uses less energy than an electric oven, and for less time, so I must give it another whirl again for these.0

My new pressure cooker is still in the box due to work commitments but I will look in with interest every day. I hope to make celery soup and something with butternut squash at the weekend when I have a little time. I make a six portion pot of soup each week and a six portion main course like goulash or a chicken stew so I am hoping to adapt recipes for my new toy!Solar Suntellite 250 x16 4kW Afore 3600TL dual 2KW E 2KW W no shade, DN15 March 14

I've got Yellow Split Peas soaking overnight - will turn it into Pea and Ham Soup tomorrow morning.
I have some stock from cooking a Ham Shank along with some of the meat. Will also add some carrots, onion, celery, possibly some red lentils along with extra Ham Stock Cube and Veg Stock Cube.0
