Charged twice at restaurant, they say I haven't been

I had a meal out over New Years and paid on credit card. After paying the bill and being given an itemised receipt I noticed I'd been charged for a drink I hadn't had so was given a refund for that whilst still in the restaurant.
A few days later when checking my statement online I noticed I'd been charged the initial amount, been part refunded, and then charged what the bill should have been. I'd been charged double. I waited a couple for days for the payment to clear, as that has happened once before and the duplicate payment disappeared, however both charges are there to be paid.
I contacted the restaurant who told me that only one charge appeared once on their system and they will have to call me back.
What are my rights and what should I be saying to them when they call me? I have a copy of the online statement ready to send to them, should this be enough or do I need to contact my bank?

    How many times did you enter your PIN?

    Could just be a processing error.

    See where you get with the restaurant. If they won't assist (give them 14 days) if not resolved them call your card provider
