Last minute ski deals, where to look?

Myself and the wife have a week booked off first week of Feb, we did this ages ago based on the cheapest prices on ski web sites and when I and her could get the week off.

We normally plan ages in the future and book up then run the gauntlet of checking weather forecasts for actual snow in the resort.

This year we thought we'd do it differently and wait till the last minute, but what in practical terms is the last minute? a month before, 2 weeks a few days? and where do we look? Trouble with Google these days is it's very money driven so do a search and you just get a list of ski operators like Thomson etc, Showing my age but what's the equivalent of Ceefax these days and what's the ideal booking point for saving money on a package vs nail biting to the night before?
