American Buffet ideas - posh?

    How about a huge build your own burger table. You can pre prepare all the toppings, cheese, bacon, salad, avocado, mushroom, pineapple, etc. take inspiration from http://www.gbk.co.uk/menu/burgers/

    Then you can have fries, ribs, slaw maybe southern fried chicken, there are some good recipes around. I know it's not posh as such but you really can't compete with a vegas buffet. A burger station is the kind they would have in vegas and not to expensive.

    For pudding you could have apple pie, pumpkin pie, pancakes? Good luck with it.

  • Okay, I'm American :) so here we go:
    do wings as suggested above.
    don't do squeeze cheese (that is a myth!)
    do chipolatas in bbq sauce (this may be pricey though)
    tortilla chips with salsa
    mini burgers (we call sliders) or the burger bar idea is good too
    have some slaw as a side (and its cheap to make)

    and the brownies are a good idea for dessert. We don't eat pancakes as a dessert in America.

    Well, that's the thing....I am trying to think about 'posh' American restaurants I have been to, but unless they are very simple steak or seafood restaurants (neither very good for buffets...), in my experice posh restaurants in the US tend to be foreign cuisine such as Japanese, French, etc. Particularly in Vegas...

    If it were me I wouldn't be too worried about making the food posh, OP. Particularly if you are enjoying some cocktails, you will be grateful for something tasty and unfussy to fill your tummies :D

    a New York Deli theme - cold meats like salami, pastrami, ham, roast beef, sauerkraut, coleslaw, salads like waldorf, caesar, dressing such as blue cheese, thousand island, assorted breads including rye bread.

    I'd be tempted to pick up on the small plates idea, everything just one or two bites big.
    Sliders, use beef meatballs, squashed back to burger shapes served in small bread buns.
    The same buns with pulled pork - SDG31000's recipe both work well with cole slaw.
    Frittata, cut into one inch cubes
    Puff Pastry Pesto Squares - take a sheet of ready rolled puff pastry, cut into squares between 1.5 and 2 inches (I use a square cookie cutter) put half a teaspoon of pesto in the middle, top with half a cherry tomato, sprinkle with grated cheese (cheddar and or parmesan) or small bits of mozzarella. Bake at 200C for 7-8 minutes until pastry golden and cheese has melted.
    Cornbread squares or mini muffins
    Tortilla chips and salsa
    Mixed leaf salad
    Bruschetta

    Bite size brownies and cheesecake cubes for dessert.

    It tends to be presentation that makes something look posh or elegant rather than the food itself. (I recently saw a very elegant meat platter where the framing was a series of long curved sausage rolls sliced into bite size pieces, described as chorizo wellington.)
