I think the main issue with old bread mix (assuming it has kept okay and not got wet or flour weevil) is degraded yeast, potentially resulting in a heavy loaf when baked. Perhaps topping up with a little fresh yeast can avoid this problem?

Don't know if they're any good but I recently saw (in Asda I think) some superlightweight cases - they look a bit cheap and nasty but to be fair they were incredibly light. I'll see if I can find a link hang on..

Surgeon on 14th Jan - next available appointment November - also not happy as this one had already been postponed twice :mad:

Thanks for this. Took 5p whoopsied rolls out the freezer and just made Stilton and broccoli soup with my 80p Stilton. Have frozen three chunks of the cheese Mse tea tonight :T
