    As promised, here is the Dandelion Fizz recipe:

    1 litre prepared dandelion flowers
    2.5 litres water
    1 litre sugar
    2 lemons

    Gather the dandelion flowers in the sun when they are fully open. Trim the stalks from the flowers, leaving the green sepals. Discard any unopened buds. When gently pressed down, the dandelions should be 1 litre.

    Wash the flowers in a colander, and put into an earthenware, enamel or plastic container preferably with a well-fitting lid. Pour 2.5 litres of boiling water onto the flowers, and cover the vessel with lid (or heavy board, or plate) and let stand for 12 hours.

    Strain the liquid through a double thickness of muslin into a large saucepan. Add the sugar and pared rind and juice of the lemons. Heat gently and stir until the sugar has dissolved, but do not allow to boil. Strain the liquid into jugs and leave to cool. Pour into clean, dry bottles with strong screw caps.

    The brew is ready to drink in three or four weeks.

    Some interesting further suggestions here.

    Dandelions are of course reputedly a diuretic, so a suggestion for dandelion tea for those bloated days!

    Also suggests the milky sap can be applied to get rid of warts. Cost nothing to try!

    Am I wrong, or would you need about a field's worth of dandelion flowers to make it? A litre of flower heads all pressed down..... that would be hundreds!

    I once unwisely offered my children a penny for every ten dandelion heads they collected from the lawn. They pretty quickly did two things:

    a) collected several litres of dandelion heads
    b) bankrupted me.


    I'm tempted, but can't help but remember that the French (who know about all things related to food) call dandelions 'pis-au-lit' (ie the wet-the-bed plant)

    We used to call them wet-the-beds too in Belfast. But that was only if you picked them and brought them home and kept them overnight!!! It was ok to pick them in the park then chuck them! Must be to do with the fact that they are a natural diuretic.
