The countryside cookbook by gail duff, full of lovely recipes, wine and beer, and medicinal info. Its very old so dont know if it still in print.
Thanks for postinge the Gail Duff book title mel123, I managed to find a copy on ebay and it just arrived this morning, lovely book full of some useful stuff and it has some pretty illustrations to!

For all those who have a glut of dandelion's, don't forget as well as using the flowers for the honey, you can use the flowers to make wine, the young leaves can be chopped and used in salads and the roots can be cleaned, chopped and roasted to make a coffee substitute! Not my cup of tea or should that be coffee :rotfl: but some people I know think it's lovely. Loads of wild plants can be used in the kitchen, one of my favs is nettle beer and wild garlic and potato soup.

Loads of other things can be used from the wild, the most famous being blackberries, and so therapeutic to! I make wine, jam, chutneys and pies with them. I love the 'food for free' concept :)

Hi, I was watching a prog on BBC Sunday week ago and the guy from castaway Ben Fogle?? was on it, he met a woman who made dandelion soup and the benefits for the kidneys. Did anyone who watched this programme have the recipe or does anyone have an original for making this? Many thanks.

  • I know this is an old thread but I was reading it as we have a few dandelions already in the garden!
Last year we made dandelion fritters by making normal batter, coating just the dandelion heads (after cutting off the rest of the dandelion!) and frying.
When cooked coat with a light dusting of icing sugar and all done!

My kids don't normally like things like this but I did'nt tell them what they were to start off with and within 5 minutes they were all gone.

A few years ago I made dandelion fizz, it was really nice, so I would like to have another try, but I can't find any recipe, I'm sure it was just sugar and lemons and dandy flower heads, has anyone any ideas ?
    thanks :)
