    I'm another stock-maker. I made stock with my goose giblets (and with the carcase). I kept the liver and froze it for a pilaff to be eaten at a later date.

    ive not been met with any of these from the inside of anything yet..........

    No, they seem to be missing from most everyday chickens, but a bird for Christmas -especially free-range ones to tend to come fully gibleted ;)
  • Hi Guys!

    Need some advice urgently. I have quite a big FR chicken we got reduced and has giblets inside:eek:.....I know how to cook the chicken etc but what is the best thing to do with the giblets:confused:

    I have searched and people either cook alongside the chicken and use for a gravy base or in stock for soup.

    If I was to use for stock, do I put in raw in the SC or cooked? Or, if I was to use for a gravy base, do I add the same time as the chicken or leave for a while as the chicken will take approx 2hrs to cook?


    I like the idea of stock for soup, so could anyone give me a "thicko" explanation please?

    i usually just put in a sauepan with a bit of onion,carrot,celery for flavour,you can use the ends of things as just for the flavour
    A bayleaf or two,couple of peppercorns,parsley or thyme stalks if you have them,bring to boil,reduce heat and simmer for 45mins approx,strain and cool and freeze, or use in your gravy/soup etc recipes.

    I usually give the heart and the liver to the dog and cat as a treat. So, melt some butter or a tblsp oil in pan, chuck all giblets in and fry off. When liver and heart are cooked, remove, leaving the gizzard (you can chop this in half to get more flavour out if you like). Then proceed as toomuchmess says - I find frying off first gives you some nice "bits" in the bottom of your saucepan which give a depth of flavour to your stock if you scrape 'em all off - plus I don't like the slightly strong flavour that the liver can give it - and the animals chomp those down in no time!

    I love finding that I've bought a chicken with giblets in as they do make nice gravy and of course we get a free dinner for our cat too! Take them out of the little plastic bag & put them in a small saucepan with enough water to cover them and any other flavourings you fancy....a bit of onion, a bayleaf, etc, then bring them to the boil, turn down & simmer for about 30 mins, then strain off the liquid to use however you usually make your gravy. If by now there's a hungry cat hanging around your ankles, cool the giblets and chop them up for his tea.

    er -I hate saying this as i try to use everything i buy - but we hate giblet gravy - so give them to a friend to give to her dog!!!!!!!!!!!!
