  • If you do individual meringue nests then you can keep the unwanted ones in an airtight container. You could pipe the meringue in christmassy shapes.

Then have a selection of fruit compotes (rumtopf for the adults), sliced/chopped fresh fruit, ice cream, and squirty cream, chocolate sauce to hand, and people can assemble their own desserts as desired. Everything can be prepared beforehand and no waste as it will all keep (fruit in sealed tubs for a day or two in fridge, dry meringues for weeks in airtight plastic).

If anyone doesn't like meringue they can just have ice cream and sauce, etc.
A kind word lasts a minute, a skelped erse is sair for a day.

& exotic fruit salad made with melon, mango, pineapple, kiwi, grapes, oranges. You can make this the day before and add the apples & pears on the day. For adults a good slurp of amaretto is a great addition. It will keep in the fridge for a couple of days after (if there are left overs!) but watch the apples and kiwi as they start to go transparent.

We're having banoffee pie - crumbled biscuit base, carnation milked boiled for around 2 hours to make it into caramel - or the carnation caramel (yes, I cheat with this!), sliced bananas and whipping cream. The base and caramel can be put ttogether the day before then just add the bananas and whipped cream before serving. We're also having christmas pudding and a whipped cream yoghurt messy sort of dessert.

Here is a recipe for 12 people (there's also a "classic" recipe on this website too):

For the whipped cream/ yoghurt dessert (sounds gross but lovely!)

mix half and half of cheap strawberry or rasperry yoghurt with whipped cream (the proper stuff), add in quartered marshmallows and mandarin slices. Some raspberries of you want. Voila!

how about something like roulade or even chocolate log...you could jazz them both up with a few extra raspberries or fruit and an extra dollop of cream....

Maybe some nice ice cream in reserve for those that really cant face anything to heavy.....Ive not looked this year but last year there were some festive ones that were very yummy.

I'm making two Nigella yule logs this evening (they freeze really well and with all the family around one is never enough!), a trifle and a raspberry jelly and panna cotta terrine. It's very spectacular and pretty easy if a little time consuming, it's just a homemade raspberry jelly allowed to set then layered in a silicon loaf 'tin' with vanilla panna cotta. you unmould carefully and serve in slices, lasted all of 5 minutes when I served it last year!

I'm making Chocolate stout cake for Xmas week, I got it from the green & blacks recipe book but here is a link (hopefully) http://www.fusspots.net/?file=kop15.php I cover mine with mascarpone beaten with icing sugar.

One year I made a lovely ameretto & chocolate log but I can't find the recipe & ameretto is expensive......

This year we're having xmas pud & I bought a choc fudge cake & choc gateau from the freezer department of tesco for £1.50 each. Not that grand but pretty handy...
