Mincemeat cake?

I was watching an old Nigel Slater Christmas programe and he had a receipe for a trifle that he used a mincemeat sponge in.

It looked lovely, am not a trifle person but would really like to try the mincemeat sponge but can't seem to find the receipe? Have tried searching but keep getting a sort of mincemeat receipe with pastry rather than sponge.

If anyone could point me in the right direction I (and dh) would be very grateful.:j

    Hi OP,

    I saw that programme. I thought he made an ordinary sponge mix and added about 1/2 jar of mincemeat at the last moment, beat it in thoroughly and cooked it as normal.

    I don't think this is what you are looking for, BUT I made these the other day and they were very nice :). They are basically a cross between a bun and a mince pie.

    I made this the other day... I can't see why it wouldn't work without the marzipan. It's very simple to make and it was really tasty!

    I used to add mincemeat instead of fruit and use a little less milk in the mix. I think the recipe came from a WI or Yorkshire Farm cookery book.
    I can cook and sew, make flowers grow.
  • I had a recipe for such a cake about 8 years ago from a Somerfields food mag.( the one that was a free monthly mag. on the tills)
    It was the best cake I've ever tasted, moist, fragrant and very seasonal.. I recall dark brown soft sugar and milk in the recipe and it took an hour or so to bake.
    Unfortunately I lost my bit of paper with it on last year during kitchen refit but I can heartily recommend it and I will be attempting to create it again this year.
    Maybe someone will have an old recipe binder from Somerfields and can find it ?
  • I make a mincemeat sponge sometimes. I use this recipe, I have no idea where it came from originally though.
    Mincemeat slice
    8 oz mincemeat
    4 oz margarine
    3 oz sugar
    2 eggs
    5 oz self raising flour
    Mix all the ingredients together. Spoon into a 10 x 7 inch baking tin and bake at gas mark 3, 160’C for 40 minutes. ( keep an eye on it though because it may cook in less time. In my fan oven it cooks much faster than that.)
