Christmas day evening and Boxing day is all about the buffet! We have loads of stuff, beetroot, coleslaw, salad, loads of waitrose and marks and spencers buffet/party food - not moneysaving at all but so nice and it is my favourite time of the year so worth it! Crackers, cheese, dips, breadsticks. Bit of everything really :)

All of the above, plus caramelised red onion. Yum.

My mum always did mashed potatoes and piccalilli, and if there was lots of gammon a poached egg too!

I like anything/everything with mine, hummus, olives, and most of the things mentioned above!

    How about pasta salads
    macaroni cheese
cauliflower cheese is a nice alternative,
or spicy wedges, 3 bean salad and nice fresh salsa.
A waist is a terrible thing to mind.

Boxing day is cold meat, roast and mash pots, peas, chipolatas with
mayo, salad cream, branston, picalilli, beetroot (fresh and pickled, red cabbage, gherkins, chillis, pickled onions of all varieties. In fact anything that comes in vinegar.
Day after is more cold meat with bubble and squeak, white crusty bread (must be butter), fried eggs and chilli sauce. All made into a sandwich. How posh.

Was going to post with some suggestions but think it's all been covered apart from left over stuffing and Belgian croquet potatoes. Am now salivating all over my keyboard. Oh how I love a boxing day buffet!

So do we - so much so that we actually have the cold buffet on Christmas Day when its so busy with everyone round. That way, I dont have to spend most of the day in the kitchen! Then we often have the roast dinner on Boxing Day. Family didnt like the change at first but as I am the cook, its my decision and now they all enjoy it!
