Good Morning Rising :)

Sorry I've not been about much, I am joining in with the tiredness that seems to have inflicted us all...........I am sure a little bit of sunshine and warmth would do us all the power of good. It seems that winter is going on forever :(

Hope that rice pudding was good :)

Ohhhh doesn't it Freeby and I've really no excuses as spent most of the winter months cooped up in the house so didn't have to cope with walking the dog / going to & coming home from work all in the dark (which I always find really depressing)

I did see some daffodils trying to come through in my front garden:) hopefully spring is on the way!

Rice pudding was ..... ohhhh myyyyy *sigh* ..... yum!:D

Very easy recipe & very scrummy!:T

So ... this morning we've been to the far away beach again - decided to go out early as it's supposed to snow later on  and had to return something to Mr T so was in the general vicinity of it!

I need to get more walks in there as really from Easter to September it gets far too busy to go :( - unless you're up & about really early (which I can be in the summer)

Rest of the day .... some more resting :o, updating my spreadsheets - not doing well on the NSD front again this month:eek: but should manage one today!:)

Oh I love rice pudding. It was one or our very rare treats when we got in from school on a cold day. Memories:)
• Hey rising
Sorry I'm not about during the week and just catching up over weekends... sounds like you've had a rubbish one. Love to you and hope everything goes ok for you this week. I've got one more week till half term and I'm determined to relax a bit then.

Just for you ... (better add that this was taken from The*Good*Cook on BBC1 yesterday!) I just wrote it down so it may differ slightly!
Simon Hopkinson’s Rice Pudding

Ingredients

40g Unsalted Butter

100g Pudding Rice

75g Golden Caster Sugar

Pinch of Salt

1Ltr Full Fat Milk

150ml Double Cream

1 teaspoon Vanilla Essence

Nutmeg

Method

· Melt Butter in pan
· Add Rice & stir thoroughly
· Add Golden Caster Sugar & pinch of Salt
· Ensure rice totally coated
· Add Milk - it will be crunchy – that’s OK!
· Add Double Cream – keep stirring!
· Add Vanilla Essence – keep stirring until boils
· Sprinkle with Nutmeg & put in oven

About 1 hr @ 180 deg – check ½ way through & cover with tin foil if very brown

Now .... Simon had a rather lovely pan that he was able to use on the hob & put straight in the oven - unfortunately, I don't have one like this:o (another thing on the wish list;)) so I had to transfer it all to an oven proof dish (which I'd pre-heated) once it boiled and then added the nutmeg.:)

Sure it'll be even lovelier (if poss!) with the double cream ... which I left out as it's a major "no no"!

I have typed this up, added a rather yummy pic, printed off & added to my new "favourite recipe" binder! Will def be having again!!!

Hi Wannabee I'm not around as much now either now I'm back at work so falling behind too!:o Schools are on 1/2 term here this week - really don't know why they can't make them all have the same hols ... it would make things so much easier for the parents who work in schools (but whose kids may go to other schools with different hols IYSWIM:o)

Hope you get a bit of time to relax ... you deserve it.:)

• Now ... I'm trying Mr T Value Batter Mix for Toad in the Hole tonight :)

7p a packet :T so sure that's cheaper than using flour and milk! (you only need to add an egg and water!):money:

Was a bit p'd yesterday tho' as they had no value SR flour (62p I think) so had to buy "proper" stuff which was £1.10 .... that's a BIG difference.

Maybe for really good cooks it makes a difference but for me, sure it won't as I'm only mediocre baker at best:o:rotfl:

They also do a sponge cake mix one for 22p - but my cakes are terrible :o so will debate on this one (although I do seem to have found a Muffin recipe that I can't ruin!:rotfl:)

Currently in the oven so fingers crossed and we'll see what it's like!
