Work abroad, need car insurance for holiday back home

hi there,
can anyone help me please?
my husband and I left the UK in April this year to stay in Australia on a temporary visa. He works, I don't!
We have a car at home, that we had to change the ownership into my mum's name so that it could be insured I case anything happened to it while we were out of the country, as we can't be insured whilst being abroad.
We are coming home at Christmas for a month and need to use our car, but no one will insure us, because we are no longer classed as UK residents because we are staying somewhere else. We have both been UK citizens from birth (1970s), and are not residents in Australia, in a way I'm on a holiday!
Does anyone know of how we can be insured to drive our own car whilst we are home please? We know we could get insurance if we hired a car but this isn't really in our budget especially when we have a perfectly good car just sitting there.
Furthermore, most companies say you have to be a UK resident for 12 or 36 months to be insured, so does this mean that when we return to the UK for good that we will have to wait 1-3 years before we can drive our cars legally again?
