Chinese pancakes

Hello!

I bought some duck breasts that were reduced (of course!), and fancy making crispy duck pancakes...

I've read through the previous threads and can find how to cook the duck, but does anyone know where I can get the pancakes from..

I'd usually be happy to make them, but not sure I'll have time today, so wondered if I could buy them somewhere. I've tried Sainsburys and noone had heard of them

Any ideas? I'm not sure of any local Chinese shops, however if anyone knows any in Surrey.....

You can buy them I'm sure I saw them in Tescos (one of the big ones) the other day. Try the blue dragon section

Is Wing Yip on the Purley Way? Croydon is a bit far out for normal daily outings, but next time we have an Ikea trip I could pop in! ;)

Plus I'm sure they would freeze ok!

    Thanks!

That's exactly where I plan to stop on my way home from ikea next time :)

Anyway, sainsburys sell pancakes. They are usually in the chilled section where the fresh meat is. They usually sell the duck and pancakes with the raw duck (as well as with the chinese food) and the individual pancakes are with the raw meat.

I've made my own but they are nothing like they should be, but I still liked them. You only need flour, water and oil I think.

    Aha, here you go:

I used that, but I don't think I ever roll them out thin enough. Still, it's good for an emergency.

You could try mini tortilla wraps. Although they aren't as thin they do the job just as well. You should be able to get these in any large supermarket.

As above, they are basically the same as a tortilla but smaller and a bit thinner. They should be somewhere near the Chinese sauces, etc., which is also where the hoi sin (plum) sauce should be. If all else fails, you could get some big mexican tortillas and attack them with a saucer and a knife!

  • i have tried searching on here(not my strong point)
has anyone any ideas how to either make or where i can buy the thin pancakes they use with crispy duck in chinese restaurants.have looked at all the different "world" bits in most super markets but no luck.
    Lead us not into temptation...

just tell us where it is and we'll find it....
  • No idea how to make them! But I have bought them loads of times from chinese supermarkets - normally about £1 for about 30 or so. Great with shredded chicken as well!!
    Good luck

Have just googled the recipe and found this - not sure i really understand it though!!

    180g Plain flour
    150ml Hot water
    2tbsp Sesame oil
    1. Sieve the flour into a bowl and then slowly add the hot water, stirring the mixture all the time until it is fully combined.
    2. Turn out the dough onto a board and knead for 8 to 10 minutes until the dough takes on a smooth consistency. Return the dough to the bowl, cover it with a damp cloth and leave it to rest.
    3. After half an hour or so remove the dough from the bowl again and knead it for a further 5 minutes. Then divide the dough into 12 equal pieces and roll each of them in your hands to make a little ball.
    4. Take two balls of dough. Place one on a board, dip the second ball half way into sesame oil and then place it on top of the first ball, oiled side down. Now with a rolling pin roll out the two balls simultaneously to make a 'double' pancake about 15cm across.
    5. To cook the pancakes, heat a dry wok on a gentle flame, and place one of the 'double' pancakes into it. Allow it to cook for 1 to 2 minutes on each side. When cooked they should be dry to the touch, but not browned.
    6. Remove the 'double' pancake from the wok and split into two. Repeat until all of the dough balls have been cooked. Keep the pancakes sealed in an airtight box in the fridge if you are not using them immediately - they have a tendency to dry out if left exposed to the air.
