Cheapest way of doing a few roast potatoes?

Options
Sometimes I want a few, say four pieces, to go with a slow cooker stew and I don't want to put on the big and only oven, any ideas appreciated.

Parboil and then fry them in fairly deep fat instead. I can't see any other way of doing them.

If you haven't got a deep fat fryer or don't want to do this then boil them until they are nearly done. Get a flat bottomed frying pan and pour in some olive oil or a blob of butter and put a medium heat under it. Drain you potatoes and put them into the pan. Keep them moving preferably using a wooden spoon/spatula (works best I'm not sure why), turning them. Watch for the fat spitting on you. As they are so soft they may break up but at least you know they'll be fluffy on the inside. Once golden (takes about 5-10 mins max) serve.

  • I would par boil and fry them as well.
Here is an idea for the future if you par boil and roast your potatoes until just beginning to colour, put them on a tray and open freeze them overnight, then put them into freezer bags in the morning and you will have plenty of roasties ready to reheat for about 15 minutes in the oven.
I have been doing this for years and I also do this with HM Yorkshire puds that take a couple of minutes to heat through
Blessed are the cracked for they are the ones that let in the light
