Hi, i need help pls.Iwas about to make mince pies today for christmas as i baking today and i had a thought would they be mouldy by christmas? I have ab no freezer room to put them in so will they be off if i make them today and if so what date ish should i make them i dont fancy doing them christmas eve as its bedlam at our house then...thanks in advance x

Hi CRAIGY I think it probably is a bit too early just now, they would taste stale if they did survive until christmas. I would make them just a few days before christmas and keep them in an airtight container then they should be OK. If you want to save time making them you could make up the pastry mix as far as rubbing in the fat and store that in a kilner jar in the fridge until you wanted to make up the pies. Then you could take out as much dry mix as you needed for the number of pies you want to make and add the water at that point. The mix will keep in a sealed jar in the fridge for about a month. My big problem with mince pies isn't that they don't keep, its that they get eaten.
My gran baked the first of her mince pies the first weekend of December, these were kept in air tight tins in the pantry and still seemed fresh at New Year (depending on how greedy the [STRIKE]gannets[/STRIKE] family had been.0 -
If you haven't tried this recipe for the pastry, myself and probably half the people on here can highly recommend it.
