    Actually, I doubt you'd need to freeze it. I think the best before dates and instructions to use it within a few weeks on the package are exceptionally conservative compared to my experience of the product. Provided you keep it dry, this stuff really doesn't seem to ever stop working or go bad. I buy a packet, open it, put it in the fridge and just use it whenever I need yeast and never worry about how old it is. I've used the same packet for months sometimes.

    As for the sealed packets, they tend to have long dates on them. Mine says 2014 and it was bought a while ago.
