    you can order direct from Doves as I plan to do and also Golspie Mill, Bacheldre etc etc. Bread deserves flour from various mills and it supports their business. As a beginner breadmaker I am learning to bloom the yeast once I got that under my belt the rest of the recipe is a doddle. I like to use breadmaker to automate dough making process and shove in oven that way I have more control. also rising bread for time needed helps it to rise.

  • Thanks for all the posts, I've had one loaf that has sunk today and another that did not have a nice rounded top but has come out OK. I have put the breadmaker in the corner now instead of the middle of the kitchen, it's under a unit so a lot of the heat is more contained (if that makes sense) - will see how the next one goes, while they are sinking they do come out OK and are nice for toast.

    according to my bread-maker manual if it sinks the dough has risen too much and then caved in. They suggest decreasing the amount of water a bit, and/or decreasing the amount of yeast used.

    I second the person who said Lidl for good breadmixes (Rivercote brand), they are £1.18 where I am for 1kg mix which gives 2 loaves. There is Ciabatta, Wheat-Rye bread, a sunflower one (not seen it for a couple of weeks - maybe discontinued?) and something else. Worth a try if you are passing.

    Amazon I discovered also sell them for a decent price - provided you buy eight packets at a time:

    However, that's not a completely impractical amount for me to store and eventually use. Still, I'd seriously consider splitting it with a friend or two as it's more than a year's worth of yeast for me.

    This is the one i find gives the best results.

    I like the James Martin bread mix mainly because his picture is on the packet and it's nice to see his face smiling at me when I open the cupboard door :)

    I often find bread mixes knocked down in the supermarkets so stock up when I see them but alternate with flour when on special offer too.
    Most of the time something is on offer somewhere and thats the time to get it :D

    Thriftlady did a great thread on 'adventures with bread dough' with all different sorts on it.

    I find my pullman loaf tin gives me the most slices per loaf but as its an enriched dough I use its not neccessarily the cheapest option..

    I have seen a few people on here buy the 25kilo sacks on Amazon direct from the millers but not sure if anyones costed them out to see if its cheaper or not
