you need a butchers who cut their own meat on the premises
its also known at the thin rib or jacobs ladder

Try Corries (branches in Ballyhackamore and Cherryvalley). They rear their own cattle so should be able to get you any cut of beef you ask for. Ring ahead and they will make sure it's brought up from the farm if necessary. Their meat is very good quality too.
