ideas for mini pie fillings especially veggie

Options
Ok thinking of making a selection of mini pies (done in a muffin tin so about the size of an American "deep" muffin) and freeze then ready for over the Christmas season.

I was thinking slow braised beef, some kind of chicken and veg and some sweet like apple. Then I run out of ideas. I would like some veggie ones if possible as my sister is veggie and after all the meat of the big day so to speak I sometimes prefer the non meat option. The only veggie pie filling I could think of is a butter pie (do they have these outside the north-just potato and butter really).

    What about mini quiches? So you could have cheese/broccoli, and...um....other quiche flavours...

    How about filling with a mushroom stroganoff or goulash type thing? Or mixed veg in a creamy sauce? Spinach and ricotta? Ratatouille?

    That reminds me, I have a friend who raves about macaroni cheese pie :eek: cauli cheese sounds much nicer to me. :T

    I love Greek piece filled with feta and spinach, and filo pastry on those mini forms would look great......but the filling could stand up to a puff pastry IMO.

    Nothing beats a macaroni pie! I didnt realise it was unusual!

    How about a veg. curry pie? Brocolli and blue cheese? chicken and mushroom? fish pies with mashed potato top? cheese, onion and potato?

  • I'm northern but I'd never heard of butter pie before I moved to East Lancs.

    I'm a veggie who hates cheese but I love pie! I make mini pies and pasties with curried lentil or chilli bean filling or chestnut, green lentil and sage which is gorgeous. The chestnut and sage is really nice and festive - makes a nice change, imo, from the constant stream of goat cheese and other not-very-festive stuff that's usually on offer.
