Regarding the £180 i would either not mention it in the letter or state you will use it to put the vehicle back into the condition it was when she took charge of it.

Get some focus.
Repossess the car (it's yours) either by the spare keys that I'm sure you kept with the paperwork, or by fooling this thieving "friend" into handing them over.
Take it straight to the auction and sell it.
Anything you get for it you deduct from the £750 she owes you (don't be greedy) and put that in writing to her.
Never again sell a car or house to family or friends.0
