  • Need to get back on track as Ive been in hospital again for a few weeks and everything gone to pot.

    Sat-Chicken, roasties, yorkies, carrots, brussels and HM gravy
    Sun-GF Sausages, Mash, Carrots, Sprouts and sweetcorn
    Mon-Shepherds Pie, Carrots and peas
    Tues-Egg, chips and beans
    Wed-Spagbol
    Thur-Baked spuds with cheese and coleslaw
    Fri-Chops, mini roasts, cabbage, peas and carrots
    Sat-TA
    Sun-Chicken, roasties, carrot, yorkies, cabbage and peas

    Mine starts Saturday so here goes

    Saturday - Lamb steak / Pork Medallions with peppersauce with potatoes and Onion rings (DD will not eat lamb)

    Sunday - Twice cooked beef brisket with roast potatoes, veg and Y.Puddings

    Monday - HM Southern Fried Chicken Goujons with chips and coleslaw

    Tuesday - Beef Casserole with Y Puddings

    Wednesday - I'm out for dinner with friends but Chilli & Rice for OH and DD

    Thursday - BBQ Chicken & Pasta

    Friday - Chicken Chow Mein

    Breakfasts will be toast, Porridge, Cereals

    Lunches will be HM butternut squash soup, Sandwiches, Wraps, Left overs

    May make some carrot cake tomorrow if time to bulk out the packed lunches

    Mine started yesterday
    Sat- fish pie
    Sun- roast chicken + trimmings
    Mon- chicken and mushroom pie (made with leftover chicken)
    Tues- beef stew and dumplings
    Wed- djej besla
    Thurs -pork steak in a cider sauce
    Fri- Tuna pasta bake

    I'm actually working on a monthly meal plan, whereby I listed all the meals we like (+a few new recipesI want to try) and then split them over the weeks so we get a good variety of dishes. Couldn't believe how easy it was to list well over 30 different meals (chicken, beef, pork, veggie, gammon). This means that I'm building up a stock of freezer meals as when I make things like fish pie, bolognese, stew etc I make enough for 2 or 3 meals. I've only got 1 meal repeated in the month and that is roast chicken. I've just noticed there's no lamb on my list...we don't eat it often as it is usually too expensive.

    Monday :Fajitas with (1st attempt) hm flour tortillas, salad and wedges.
    Tuesday: turkey and veg pie with mash and gravy :)
    Wednesday: Spaghetti bolognaise
    Thursday: Lo bolognaise and wraps with salad.
    Friday:Fish and chips

    Soooo, I've just gone to check all the ingredients for the gammon in cider ready to put in the SC tomorrow morning before work, and we managed to completely forget to buy a gammon joint when we were at the butchers on Saturday! :wall:

    So got to change the plan, ha ha, it's now lasagne Mon/Tue and gammon on Wed/Thur! :rotfl:

    Sunday roast chicken and trimmings

    Monday will be something with left over chicken (no idea yet)

    Tuesday frankfurters cooked with toms, passata and pasta

    Wednesday something of toast night (late night at work)

    Thursday toad in the hole

    Friday meatballs and pasta

    Saturday cottage pie

    All will be served with mixed veg. Hopefully a portion from each night will be next days lunch for work, ds1&3 have school dinners and ds2 a pack up
    Breakfasts are cereal, toast or crumpets.

  • Thanks to everyone who posts on here...I don't post often, but pop in on occasion when I need some inspiration. This week I'm grateful for the Quesadilla suggestion! :)

    This week for us:
    Monday: Pesto Pasta with LO ham joint and various veg
    Tuesday: Halloumi & Salad & wraps/pitta bread
    Wednesday: Quiche & new potatoes (possibly also peas, depends if I can find some reasonably priced marrowfat peas in the shops)
    Thurdsay: Freezer Fish & Chips and frozen peas & sweetcorn
    Friday: Chicken (HM) Teriyiaki and rice
    Saturday: Out - got an overnight stay in the Barossa Valley which includes tea in the pub so will be doing that.
    Sunday: HM Quesadillas (well, bought wraps but with chilli from the freezer) and salad

    Generally though, the days are interchangeable and we just pick what we fancy, or whatever needs eating up first dictates the order.

    Fri: Away - Dance Competition at Blackpool

    Sat: Chinese Takeaway

    Sun: Lamb Hotpot with Apricots

    Week gone wonky already!

    Tonight - spiced carrot and lentil soup, roasted aubergine parmesagne (from scratch), chocolate from duty free for desert Done!
    Saturday - [STRIKE]spicy sausage casserole w/rice (anyone have a recipe which includes lots of veg?)[/STRIKE] Ended up going out for dinner with friends
    Sunday - [STRIKE]pasta ragu using leftover parmesagne sauce and loads of veg[/STRIKE] Had sausage casserole for brunch instead and spaghetti meatballs for tea
    Monday - [STRIKE]leftovers Friday or Saturday[/STRIKE] Leftover carrot and lentil soup with nice german bread I got in
    Tuesday -[STRIKE]vegetable fritata[/STRIKE]a meatball sarnies with roast veg
    Wednesday - [STRIKE]leftovers[/STRIKE] Stir fry
    Thursday - leftovers
    Mortgage free by 30:eek:: £28,000/£100,000

  • I have been DREADFUL recently. Not sticking to plans at all (I blame the fact we are going on holiday soon :p)
    This week so far is looking like :
    mon- lamb chops, leftover mash, PSB
    Tu-leek, pea and smoked salmon pasta
    We-squash & 'nduja risotto (or 'nduja and broccoli pasta, or 'nduja & cabbage risotto. Basically something with 'nduja lol)
    Th-hot smoked salmon and lemon potato crush, carrots & peas
    Fr-poss just me-omelette & chips, if OH home indonesian chicken satay, broccoli, rice
    Sa-spiced duck ramen
    Su-roast topside, roast parsnips, carrots & spuds (might change the roast depending on how I feel/whether we take a trip to the farm shop for better meat :D)

    Will make a lovely (hopefully) big batch of vegetable broth tomorrow-with leeks, carrots, onions, celery, celeriac, lentils, barley (or pearled spelt) and thyme, which will sort my lunches for the next few days
