    I am trying the breakfast casserole thing overnight to night for breakfast tomorrow. I rarely have a cooked breakfast so the kids will think its a special occasion. Well it is really, Im in a celebratory mood!:)

    How was the breakfast casserole - I might try it for tomorrow but am worried it will turn out a mess and no one will eat it!

    I suppose its like a savoury bread pudding? I want to do it tomorrow too but just wondering what I'm going to wake up to tomorrow in the slow cooker!

    It was fine although I didnt make it in the humungous american size portion! I lined the slow cooker with buttered bread, laid 6 frozen sausages on top of the bread, covered with a layer of bread, poured on 3 beaten eggs and covered the top with cheese, i thought 2 cups or so was excessive! It was tasty and smelled nice to come down to a cooked breakfast. A bit dry so we had baked beans with it. I only used 3 eggs cos that is all I had, i think it needed more eggs and more moisture, maybe mushrooms or tomatoes?

    I've got Mr TM all fired up about having this breakfast tomorrow.

    Ssaver - what would you suggest for more moisture? Putting the toms and mushrooms around the sausages? I've only got tinned toms left - do you think they will make everything too mushy?

    Might even stick a couple of rashers in too - oooh, I'm getting hungry just thinking about brekkie and I'm still stuffed after dinner.

    Edit - just gone back up through thread. Ssaver, did you put the milk in? Maybe if I put all that liquid i with the toms, it will turn all soupy (yuk) Maybe I'll do either tinned toms OR milk and see.

    but i dont like milk anyhow.
    I think a few mushrooms would be ok, maybe tomatoes would be too mushy??? It was like a savoury bread pudding really, but not as soggy. Im still soaking the slow cooker pot to get the remains of the bread out! But it was worth it, easier thn doing a conventional 'cooked' breakfast.

  • Well, just put my brekkie on. Even reducing the amounts of bread and cheese, still looks like heart-attack-on-a-plate stuff:D

    Didn't go for the tomatoes, just added about 1/2 cup of milk to the 4 eggs. Stuck a load of mushrooms on top of the sausages though. Did you pre-cook your sausages? I browned mine for about 5 mins on the George Foreman to get rid of some fat as much as giving colour.

    Still sounds delicious though :) I had to change plans, wont be doing the breakfast casserole tomorrow as we ate all the eggs in a frittata tonight. Let us know how it goes TM :)

    Oh God, absolutely yum-a-rooney. This breakfast casserole is deffo going to be on the menu again.There's plenty left if anyone wants to pop round before Mr TM gets up :D

    Ssaver - you can't taste any milk, so it's definately worth putting some in the egg mix.

    Next time, I'll put a couple of fresh toms in and see. Didn't try the bacon - doesn't really need it, but hey, let's experiment.
